Williamsburg Seasonal Berry Summer Mojito

Berry Simple Syrup

  • 1.5 cup Blueberries*
  • 1.5 cup Strawberries*
  • 2 cups Sugar
  • 2 cups Water

Place berries, water and sugar into a saucepan. Bring to a boil and then reduce to a simmer. Cook for 15 – 25 minutes, stirring frequently, until the berries are soft and the syrup has a rich purple color. Place a fine strainer over a bowl. Dump the berry mixture into the strainer and allow to drain. (Do not press down on the berries.) Once all the liquid is gathered, place into a container and store in the refrigerator until ready to use.

*We chose these berries because they are in season in Virginia in the early summer. However, this can be adjusted to include different berry or fruit combinations that are in season in your location and for your tastes.
